Best Hash brown Casserole You Will Ever Eat!!

I wanted to share one of my favorite recipe's! It is for my Aunt Christy's Hash Brown Casserole.  It is my favorite side dish!! It is so easy too!! Here are the ingredients:
1- package of Hash Browns Shredded Country Style
1- tub of 8 oz sour cream
1- can of Campbell's Cream of Chicken Soup
1- stick of melted butter
1- 2 cup package of shredded cheddar cheese (a little over 1 cup in the mix and as much as you like on top!)
1- chopped onion (use as much as you'd like...I use about 1/2 cup)

Preheat oven to 350 degrees.  Blend all ingredients together in big bowl. Spray 13 x 9 pan with cooking spray. Spoon casserole into dish and sprinkle remaining cheese on top! Bake uncovered for about one hour or until golden brown on top! Yummy!!! You will thank me!!

The End of 1st Year is NEAR!!


Well, it's crunch time for Jordan as he nears the END of his first year!! I can not believe that he is almost an official second year medical student as of April!! He has done so well his first year!! I am more than proud!! He has pretty much made A's on every test he has taken. Very impressive!! He only has one set of tests left as a "1st year" and I know he will, again, do well!! I already knew my hubby was smart.. but doing THAT well in medical school is amazing. I know he will be the most caring, compassionate doctor ever...I can't wait to find out what he ends up being interested in. Right now his "interests" are ENT, Emergency Medicine, and Orthopedic Surgery.  Who knows what he will do! I'm behind him all the way with whatever he wants to do.. as long as he doesn't pick General Surgery (that is my only request) hehe. 

Last Weekend=Relaxation with the Fam

I am just now getting time to write about our wonderful weekend with our family in Smyrna last weekend. It was so nice to visit Jordan's parents' house and to see Jessica, my sister-in-law, and Cole, our nephew!! He has gotten SO big!! The first night we were there we met Jessica and Cole at Olive Garden (one of our favorite restaurants!!) in Mount Juliet after Cole's karate practice. Cole showed off some of his Karate moves to us while we waited for a table. Too cute!! He was so proud of his white belt and color bands!! I wish I had gotten a picture of him! On Saturday, it was rainy,.. so Damian (My F-I-L) and Jordan went to see the movie "Taken"..while us girls (Jessica, Teresa, and I) plus Coleman went to have a delicious lunch at Famous Daves and then we went to my favorite place ever SUPER TARGET!! :) After that, we went to Publix and picked out desserts to take home and we had coffee and desserts once the guys got home from the movie. Sunday, we sadly headed back to Memphis. I definitely cried leaving because I miss living in Nashville and living close to family SO much!! Hopefully one day we can move closer to everyone, because right now I feel like we are on the other end of the world here in Memphis!!

SNOW in Memphis

Here is a picture of our house with little snow left, but it is still pretty to me!! 


It rarely snows in Memphis and we had no idea it was supposed to snow this weekend!! Let alone, stick to the ground!! We got about 4-5 inches yesterday. It started Saturday afternoon..huge snowflakes were coming down fast! It was beautiful! Millie loved playing in the snow. This picture is of her after playing in the snow..she is warming up by our fireplace! She recently discovered the fireplace and its warmth! :) She fell asleep shortly after this picture was taken. It makes her sleepy!! So cute!

A Very Happy Valentine's Day


Jordan and I had a wonderful V-day. We slept in (which is a rare occurrence for both of us) and got up and Jordan cooked me a wonderful breakfast complete with eggs, bacon, and cinnamon rolls!! He then gave me the cutest card ever that he made out of construction paper. He also gave me an envelope with my name on it and I opened it up and there were LEGALLY BLONDE broadway play tickets for the Orpheum in Memphis!! I was sooo excited and surprised, he did really good!! =) We promised each other we wouldn't get anything for Valentines since we are so broke, but I will let this one slide because I am so excited to see Legally Blonde!! I've always loved the movies. So then we went to see a movie that I've wanted to see since it came out last weekend: "He's Just Not That Into You"! I absolutely loved it!! He was so sweet to take me there and be the only guy in the entire theater. He didn't even complain or "roll the eyes" at stupid parts. So, I was so happy!! We then trekked on over to East Memphis and went to Olive Garden (one of my favorite restaurants ever!) and had a late lunch/early dinner so we could miss the big Valentine's Day crowd. It was so yummy!! And the best part is, we had a gift card, so the meal only cost 4 dollars!! Very big plus!! After eating we went to Fresh Market and got some yummy dessert to take home and had it later for our dinner. It was the BEST first Valentine's Day as a married couple that I could have ever asked for!! I have the greatest hubby ever!!

The Bachelor!!!


The Bachelor has become one of my latest obsessions. Jordan thinks i'm "too obsessed", but I disagree!! This season has just been so good. Now it is down to three girls: Jillian, Melissa, and Molly. I love Jillian because she seems the most down to earth and genuinely nice of the three. Her family is great and she seems like she would be a great mother to Ty and that her and Jason would actually stay together..so needless to say, I think that she should be the one Jason picks!! The next girl is Melissa, I really liked her up until the last show when her parents wouldn't let Jason meet them on air (which I can understand), but then her "closest" friends had never met them either!! Red flag!!! So, even though she is gorgeous and has a great personality, I feel there might be some skeletons in the closet there! Lastly, there is Molly. Molly "seems" sweet and is very pretty also..but i've always felt that she is too fake and robotic like. She doesn't seem like she could ever just "hang out" and do nothing. She seems very uptight and a "go getter", which there is nothing wrong with that except I don't think that is what Jason and his little boy, Ty, need in there life! So, mark my words.. Melissa will probably win (which i'm okay with), but they won't be getting married and are probably already broken up by now! We shall see!! Can't wait till next Monday!!
